
Chia Pudding
I didn’t know what I was missing out on with chia pudding: it’s light, satisfying and you can dress it up anyway you like. It’s also extremely easy to make, and a great substitute for yogurt or oatmeal at breakfast. All you need is about 5 seconds and:
1 can lite coconut milk
1/3 cup chia seeds
I noticed that prepackaged chia seeds are almost double the price of bulk chia seeds at my grocery store, so I definitely recommend buying them from the bin!
Put the coconut milk and chia seeds together in a tupperware or jar and let them sit in the fridge for a few hours or overnight. That’s it!
If you like you can add a little maple syrup or vanilla.
I like to put fruit and nuts on my chia pudding–granola is great as well.
