Polenta Cakes

I love polenta, and I especially love the firm, creamy on the inside, polenta cakes I get sometimes at restaurants. I just could not figure out how to get mine like that, and spent a lot of time cooking it on the stovetop as per internet recommendations.

Vegan Banana Bread

I love the sweetness of natural fruit, and I was struggling with banana bread recipes that add sugar (even when I used coconut palm sugar). After about 20 rounds of banana bread tinkering, this is one I really like!

Toasted Pumpkin Seeds

Tangy roasted pepitas have become a staple in my kitchen. The raw pumpkin seeds take just a few minutes to roast up, but I always make more than I need and keep the extra in a little jar or cup on the counter because I will end up adding them to everything when they're close at hand!

Beignets

Do this, at least once, and you will probably be keeping beignet dough in your fridge from now on, forever. This is way too easy for how insanely amazingly delicious it is. People get this spectacular look of shock on their face when they bite in for the first time, especially since none of my friends know what beignets are. My most recent guest said, "these are like crack!"
