Vegan Thanksgiving!

We’re having my parents and about 8 friends over this Thursday, because Moab vegan Thanksgiving has become a tradition.
This year is the best weather I’ve ever seen, ever (!!), so there has to be some playing in the morning and cooking in the afternoon….
wilted kale salad with cranberries
roasted green beans with garlic
vegan stuffing
mushroom gravy
white bean salad
grilled tofu
mashed sweet potatoes
roasted butternut and acorn squash
cornbread
pumpkin pie
apple pie
This sounds delicious! I love that you’re vegan and share all kinds of great suggestions for it, it’s nice see other climbers that are vegan too. Happy Thanksgiving!
I’ll be bringing the token vegan dishes to family thanksgiving that everyone will be too afraid to eat…More for me. =)

Happy belated Thanksgiving to you and your Family and friends. You have been such an inspiration for me since I “discovered” you 2 years ago. From eating more consciously and responsably, to inspiring me to get out and have fun cycling, running, climbing highway exit ramp walls and office building facades late at night (limited climbing here in South Florida) you and Mario have REALLY provided that spark that I need when feeling, well, lazy! And my ripped abs concur 🙂 Happy and safe Holidays!!!!!

Mm! I cooked my vegan thanksgiving this year on a dual burner coleman stove in Indian Creek, haha. Stuffing, mashed sweet potatoes, mushroom gravy, brussels sprouts and cauliflower! Simple but delicious.
