Polenta Cakes

I love polenta, and I especially love the firm, creamy on the inside, polenta cakes I get sometimes at restaurants. I just could not figure out how to get mine like that, and spent a lot of time cooking it on the stovetop as per internet recommendations.

Toasted Pumpkin Seeds

Tangy roasted pepitas have become a staple in my kitchen. The raw pumpkin seeds take just a few minutes to roast up, but I always make more than I need and keep the extra in a little jar or cup on the counter because I will end up adding them to everything when they're close at hand!

Chia Pudding

Chia pudding is light, satisfying and you can dress it up anyway you like. It's also extremely easy to make, and a great substitute for yogurt or oatmeal at breakfast.

Summer Food For Travel
